But the team at Coppaluna didn’t stop there, rolls and toasties with plenty of vegan options available, this colourful vendor is always top of our lunch list.
We’ve asked Choppaluna’s Founder and CEO Nikras to share the story behind the restaurant, his favourite meal, and his insights about the hospitality industry.

Q: What’s the inspiration behind your business?
A: To make guilt-free indulgence accessible and change the mindset for healthy eating!
Q: Where are you from and how has that shaped your business?
A: I consider myself a global citizen with various roots. Born and raised in Berlin (Germany), I was lucky to have lived in great cities such as Montreal (Canada), Glasgow or London for certain periods of my life. Those experiences definitely had a big impact on how I set the standards for our business, as I tried to take the requirements from various stations I’ve lived in to create the best possible product & conditions for us to compete in a market with the big players.
Q: What’s your favourite meal on your menu? And what item on your menu do you think represents your brand best?
A: My favourite is the Spring Chicken Chopped Salad.
Q: What’s the most underrated item on your menu?
A: The Meet Your Matcha Smoothie Cup

Q: What’s your favourite part of working in this industry?
A: You have the chance of immediate feedback when you see people in the store. This is very valuable compared to other industries like IT, where your target group usually sits behind a screen far away.
Q: What should we order from you when we want to celebrate?
A: Definitely our heavenly smooth Choconut Chia Pots and some Big-Rolls! Also our new Luna Melts are great for sharing.
Q: What is your top tip for eating better?
A: The most important part is to choose products where you are not missing out on taste. Plus, it needs to be accessible.

Q: What makes your business stand out?
A: We always focused on making sure you do not compromise on taste or on portion size when you choose to eat from Choppaluna. This was very important for us from day one.
Q: What part of your business are you most passionate about and why?
A: We have a very strong base of loyal guests that come/order very very regularly. This makes me very happy. From my own experience I know that the places I am a “regular” at, they’re the ones I really love.
Q: What’s the ingredient you always find yourself reaching for when you’re cooking at home?
A: Ginger.
Q: What’s the best thing you’ve ever eaten?
A: There was a cheesecake I had in Dallas at a steakhouse. I will have to go back sometime in my life to have another slice one more time!
Q: What are you up to when you’re not in the kitchen?
A: Spending time with my family, mostly outdoors.
