Vendor Spotlight: Serving up slices with Crust Bros

Get to know one of our newest pizza vendors, Crust Bros! With a goal to serve up authentic, fast, great value and personalised pizza to the people of London, it was a no-brainer to add them to our platform.

Owner, Joe Moore, was working a typical 9-5 office job but always had a longing for the buzz of a restaurant. He eventually made the decision to quit his job, and booked a ticket to Italy to learn the ins and outs of Neapolitan ‘za. From there, Crust Bros was born. Joe spent two years travelling across London doing pop-ups until he found a permanent location in Waterloo. Since then, Crust Bros has opened up additional locations in Wandsworth at Sambrook’s Brewery and at Boxpark Croydon.

We were lucky enough to get a few minutes of Joe’s time to find out a bit more about the business and what he gets up to in his spare time.

Q: What’s the inspiration behind your business?

A: I always had a love for hospitality and in particular PIZZA. After a road trip around Italy learning as much as possible, I returned to London to start Crust Bros as a street food company and since then we’ve opened 3 sites. Now we spend every day making soul-lifting pizza!

Q: Where are you from and how has that shaped the business?

A: I’m from Nottingham in the centre of England. Having grown up without any decent pizza and then seeing how they do it in Naples, I was determined to bring that to London

Q: How would you describe your food in 5 words?

A: Soul-lifting leopard print pizza

Q: What’s your favourite meal on your menu?

A: I’d say the Nonna’s Yard pizza. It’s a classic Neapolitan base but topped with pesto, goat’s cheese and caramelised onion. It’s an unbelievable flavour combo – Naples-inspired but not defined.

Q: What’s the most underrated item on your menu?

A: The classic Margherita. Some die-hards will only ever eat this but lots think it’s boring. However, the mark of any good pizzeria is its Margherita as there’s nowhere to hide. 

Q: What’s your favourite part of working in this industry?

A: The joy it brings. From giving young people their first introduction to working life and how great that is to seeing satisfied customers returning time and again to our pizzerias with a smile on their faces. 

Q: What should we order from you when we want to celebrate?

A: Lots of pizza!

Q: What is your top tip for eating better?

A: Choose better quality. I eat pizza pretty much every day but I know the quality that goes into our pizza.

Q: Is there anything you’d like to share that highlights what makes your business stand out?

A: We’ve won at the National Pizza Awards twice in the last three years they’ve run it. That alongside our iconic leopard print crust. 

Q: What part of your business are you most passionate about and why?

A: It’s got to be the dough. It changes on a daily basis due to the weather, humidity, the flour, and the chef making it.

Q: What’s the ingredient you always find yourself reaching for when you’re cooking at home?

A: Maldon sea salt. 

Q: What’s the best thing you’ve ever eaten?

A: Probably the tasting menu at Osteria Francescana in Modena

Q: What are you up to when you’re not in the kitchen?

A: Playing and watching football – Nottingham Forest FTW!
